  • 4 egg whites (at room temperature)

  • 50g butter – softened

  • 4 tablespoons of plain flour

  • 250ml full fat milk

  • 2 tablespoons of Gruyere cheese (grated)

Directions

  1. Preheat the oven to 350°F/180°C . Place the butter in a 20cm (8 inch) round shallow ovenproof dish and melt in the preheated oven until melted and bubbling.
  2. In a separate pan, add your butter and flour together over low heat until they are combined into a paste - this is called your roux. Then gradually pour in the milk and whisk continuously for about two minutes until thickened – take care not to let it boil as this will affect its texture! Add some grated gruyere cheese at this point for an extra cheesy taste if desired.
  3. Separately, beat the egg whites with an electric mixer or whisk until stiff peaks form – you should be able to turn your bowl upside down without any liquid escaping!
  4. Fold the roux mixture into the beaten egg whites gently but thoroughly until fully combined. You can also add other flavours such as ham or herbs at this stage if desired!
  5. Pour mixture into your pre-buttered oven dish ensuring it's evenly spread out all around the sides and top then place in a preheated oven for 15-20 minutes or until lightly golden brown on top - make sure you set your timer!     • 1 sheet all-butter shortcrust pastry
    • 50g butter – softened
    • 150ml single cream or full fat milk
    • 2 eggs – beaten with a fork
    • 100g cooked ham/salami/bacon pieces (optional)

    Directions

    1. Preheat the oven to 350°F/180°C . Place the butter in a 20cm (8 inch) round shallow ovenproof dish and melt in the preheated oven until melted and bubbling.
    2. Roll out shortcrust pastry on a lightly floured surface so that it covers the bottom and sides of the dish. Crimp the edges with your fingers to create an even border all around if desired.
    3. Place back into the preheated oven for 10 minutes till lightly golden brown – don't forget to set your timer! Allow to cool before filling with ingredients of your choice but ensure eggs are added last.
    4. Whisk together cream or milk with the beaten eggs then pour this mixture into your cooled shell - you can also add grated cheese, cooked bacon, diced ham or salami at this point too to make it more flavourful if you wish!
    5. Bake in a preheated oven for 25-30 minutes or until golden brown on top – don't forget to set your timer! Allow to cool slightly before slicing into portion sizes before serving.

    Ingredients

    • 1 sheet all-butter shortcrust pastry
    • 50g butter – softened
    • 125g caster sugar
    • 2 eating apples – peeled, cored and cut into eighths

    Directions

    1. Preheat the oven to 350°F/180°C . Place the butter in a 20cm (8 inch) round ovenproof dish and melt in the preheated oven until melted and bubbling.
    2. Sprinkle over the caster sugar evenly then layer on top with the apple pieces - arranging them in a circular pattern if desired.
    3. Cut out 4 small circles out of the shortcrust pastry using a jar lid or cookie cutter to fit on top of the apples (you can also roll out the dough slightly bigger than your dish so that you can crimp around the edges of your tart but this is optional). Place these circles on top of your apples ensuring they are spread out evenly across your tart.
    4. Place in a preheated oven for 40 minutes or until golden brown on top – don't forget to set your timer! Allow to cool slightly before serving upside down onto plates – be careful as this can be tricky due to how hot it will be once removed from oven! Enjoy with custard or ice cream...mmm... !

    Homemade Pain au chocolat recipe

    This easy to follow baking recipe is not only delicious, but it is also incredibly fun for all baking-lovers out there. Here's my secret for creating a particularly delectable batch of these goodies: start with high-quality ingredients and keep an eye on your oven temperature - that’s the real trick to making treats that taste like they came straight from a bakery. 

    Don’t forget to enjoy yourself while baking this classic French pastry, either!

    Ingredients

    • 300g plain flour
    • 2 tsp instant yeast
    • 3 tbsp caster sugar
    • 1/2 tsp salt
    • 50g butter – softened
    • 240ml warm water
    • 6 (54 g) pieces of dark or milk chocolate bar (you can use baking chocolate chips if that's easier to find!)

    Directions

    1. In a large bowl, combine the flour, yeast, caster sugar and salt. Mix together until thoroughly combined.
    2. Cut the softened butter into small cubes and add to the dry ingredients. Using your fingertips, rub the butter into the dry ingredient mixture until it resembles breadcrumbs.
    3. Slowly pour in the warm water whilst stirring with a wooden spoon or spatula until you have formed a wet dough ball.
    4. Turn out onto a lightly floured surface and knead for 10 minutes until it is smooth and elastic. Cover loosely with clingfilm and leave in a warm place for about an hour for it to double in size.
    5. Preheat the oven to 350°F/180°C . Roll out the dough on a lightly floured surface so that it is about 30 cm long by 16 cm wide (12 inches by 6 inches). Cut into twelve 4cm by 8 cm rectangles (1 1/2 inch by 3 inch). Place the rectangles onto two greased baking trays, spaced well apart so they do not touch each other when they expand during baking. Make sure they are flat on the tray as they can expand unevenly if placed too close together or too far apart!
    6. Place one chocolate piece in between each two rectangles - a total of 6 per tray - pressing down gently so they do not move around too much when rising during baking! Brush with egg wash before baking for extra golden brown colouring (optional). 
    7. Bake in a preheated oven for 14 - 15 minutes or until golden brown on top – don't forget to set your timer! Allow to cool before serving - if you can wait that long!     • 150g icing sugar
    • 80g ground almonds or almond meal
    • 25g plain flour
    • 120g egg whites (approximately 4 large eggs) – at room temperature
    • 75g caster sugar

    Directions

    1. Preheat the oven to 350°F/180°C . Combine the icing sugar and ground almonds/almond meal together in a food processor, then sift into a bowl to remove any lumps before adding the plain flour.
    2. Separately, beat the egg whites with an electric mixer until soft peaks form. Gradually add the caster sugar while continuing to beat until stiff peaks form - you should be able to turn your bowl upside down without any liquid escaping!
    3. Add half of the meringue mixture into the almond mixture and fold gently but thoroughly until fully combined but not overmixed - take care not to deflate the air whipped into it as this will affect its texture! Then add remaining meringue mixture and continue folding until well blended, then scoop out onto greased baking parchment paper using either a piping bag or tablespoon ensuring each spoonful is around 2-3 cm apart from one another as they will expand when baked – if desired you can also use food colouring at this stage for some fun coloured creations!
    4. Place in a preheated oven for 15 minutes or until lightly golden brown on top - make sure you set your timer! Allow to cool completely before peeling off parchment paper carefully.

    4. Place in a preheated oven for 20 minutes or until lightly golden brown on top - make sure you set your timer! Allow to cool completely before carefully transferring from the mould using a palette knife.
